Buried, not barrelled

The Qvevri

Georgian wine ferments underground in a qvevri, a beeswax-lined clay vessel buried to the neck in the cellar floor. Skins, stems and juice all go in together, which is why so many of the whites come out amber. The method is on the UNESCO intangible heritage list and it is still how family cellars across Kakheti work. Tastings pour six to ten glasses, usually with bread and sulguni on the table.

One road north

The Georgian Military Highway

The Georgian Military Highway runs from Tbilisi to the Russian border through the Aragvi gorge, past the fortress at Ananuri and over the Jvari Pass at 2,379 metres. It ends at Stepantsminda, where a 4x4 grinds up the switchbacks to Gergeti Trinity church, alone on its ridge with Kazbek behind it. Almost every operator does the whole thing and gets you back the same night.

The Supra

A Georgian supra is a feast with a chairman. The tamada sets the toasts and the pace, and the pace is slower than you expect. Cooking classes build toward one: khinkali pleated by hand, khachapuri pulled out of the oven, walnut sauces on everything. The dumplings are picked up by the topknot, and the knot is the one part you leave on the plate.

Passes, permits and long drives

Book these before you land in Georgia.

Rain plans

Batumi is one of the wettest corners of Europe. Plan for it.

The coast gets more than two metres of rain a year and Tbilisi springs are no drier. Every good answer is under something: a cellar with the qvevri under your feet, a kitchen table with dough on it, a lit kilometre of cave passage in Imereti.
